Lunch Made Easy: Cooking With Trader Joe's Cookbook, EasyLunchboxes Edition

You asked and I'm so pleased to finally announce... IT'S HERE, IT'S HERE!! OUR COOKBOOK!!

I am overjoyed to have been a part of this project with some of the most amazing contributors, and not to mention the fabulous Kelly Lester (CEO of EasyLunchboxes).

This is the 7th book in the Cooking With Trader Joe's Series. The EasyLunchboxes edition is filled with our stories, favorite recipes, and time-saving tips to make lunch-packing fresh and fast!

If you don't have a TJ's in your city, don't worry - the  ingredients in this book can be swapped with items available at your local grocer!

The book is available on and bookstores everywhere, including Barnes & Nobles starting today!!

  1. This surprises me, simply because I gave up on Trader Joes long ago due to my daughter's peanut allergy. I couldn't find much safe food. There was a cross-contamination warning on virtually everything, including the italian sausage. (Was it made out of squirrel? Nuts in the meat? I was frustrated!)
    What do you find helpful there? I used to love the store.

    1. Hi Amy! I completely understand. I actually don't have a TJ's around me but did a lot of research online and through my sister (who worked next to one of their stores). Even though I was only responsible for proving gluten-free recipes, I was very conscious that the items I was using were nut-free too. If you read above, that's also why I made mention of the note -- not to worry if you don't live by a TJ's or even if you have trouble with allergens for that matter, you can find the ingredients I used in your local grocers :) nothing was super TJ's specific to their stores only. Hope that helps!
